A smooth and creamy avocado pasta sauce made with ripe avocados, garlic, lemon, and olive oil. This quick, no-cook sauce comes together in minutes and coats pasta with a fresh, rich flavor that feels both light and satisfying.

Ingredients

  • 2 ripe organic avocados
  • 2 cloves garlic
  • 2 tablespoons fresh lemon juice
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh basil leaves
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2–4 tablespoons water (to thin as needed)
  • 12 oz pasta of choice (spaghetti, linguine, or fettuccine)

Optional

  • grated Parmesan cheese
  • red pepper flakes
  • cherry tomatoes

Instructions

  1. Bring a pot of salted water to a boil and cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
  2. While the pasta cooks, cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
  3. Add garlic, lemon juice, olive oil, basil, salt, and pepper.
  4. Blend until smooth and creamy.
  5. Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
  6. Toss the warm pasta with the avocado sauce until evenly coated.
  7. Serve immediately and top with Parmesan, red pepper flakes, or fresh herbs if desired.
Pro Tip: Toss the sauce with warm (not hot) pasta to keep the avocado bright and fresh. Excess heat can dull the color and slightly change the flavor.
