Ingredients
- 2 ripe organic avocados
- 2 cloves garlic
- 2 tablespoons fresh lemon juice
- ¼ cup extra virgin olive oil
- ¼ cup fresh basil leaves
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 2–4 tablespoons water (to thin as needed)
- 12 oz pasta of choice (spaghetti, linguine, or fettuccine)

Instructions
- Bring a pot of salted water to a boil and cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
- While the pasta cooks, cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
- Add garlic, lemon juice, olive oil, basil, salt, and pepper.
- Blend until smooth and creamy.
- Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
- Toss the warm pasta with the avocado sauce until evenly coated.
- Serve immediately and top with Parmesan, red pepper flakes, or fresh herbs if desired.
Pro Tip: Toss the sauce with warm (not hot) pasta to keep the avocado bright and fresh. Excess heat can dull the color and slightly change the flavor.
